HOMEMADE NOODLES 
2 c. flour
3 egg yolks
1 egg
1 tsp. salt
1/4-1/2 c. water

Measure flour - make well. Add egg yolks, egg and salt. Mix thoroughly into flour (with hands). Add water, little at a time; mix thoroughly each time. Add only enough water to form dough into ball. Put on floured surface, knead 10 minutes, let rest 10 minutes. Roll thin and cut into 1/8 inch strips or put through pasta machine.
