MASHED POTATO DOUGHNUTS 
5 c. flour
7 tbsp. baking powder
1 1/2 warm mashed potatoes
1 tsp. salt
3 eggs, well beaten
2 c. sugar
1 1/2 tbsp. butter, melted
1 tbsp. nutmeg
1 c. milk

Sift flour and baking powder. Beat together potatoes, salt, eggs, sugar and melted butter. Add nutmeg, milk and stir. Add flour and stir until just blended. Chill.

Place 1/3 of dough on lightly floured board, sprinkle with flour and roll out to 3/8 inch thickness. (Dough should be just stiff enough to handle.) Softer the dough the more tender the doughnut.

Cut with doughnut cutter dipped in flour. Fry until golden brown in 375 degree oil. Drain on paper towel. While still warm shake in a paper sack with cinnamon sugar or powdered sugar. Makes 4 dozen.
