SPINACH STRATA 
54 Ritz crackers
2 (10 oz.) pkgs. frozen chopped spinach, thawed & drained
10 oz. Muenster cheese, grated
2 1/2 c. milk
3 eggs
2 tbsp. Dijon mustard
1 1/2 tsp. liquid hot pepper seasoning
2 cloves garlic, minced

In 2 quart dish arrange 18 Ritz crackers in 3 rows. Combine spinach and 2 cups grated cheese. Sprinkle half of mixture over crackers. Repeat layers. Top with remaining crackers. Sprinkle with remaining cheese. In medium bowl, beat together milk, eggs, mustard, garlic and hot pepper. Pour evenly over mixture in baking dish. Bake at 350 degrees for 1 hour or until puffed and golden. Cut in squares and serve.
