SCALLOPED EGGPLANT 
1 eggplant
1/2 c. water
3 tbsp. melted shortening
1/2 c. soft bread crumbs
1 egg, well beaten
1/2 tsp. salt
1/8 tsp. pepper
1 tsp. onion, minced
Buttered bread crumbs or cracker crumbs

Peel and slice eggplant, then cut into cubes. Cook in water until tender. Drain. Add melted shortening, soft bread crumbs, eggs, seasonings, and onion. Pour into greased casserole. Sprinkle with bread or cracker crumbs. Bake uncovered in preheated 350 degree oven for 25-30 minutes.
