SALMON-FLOUNDER ROULADEN 
1 med. onion, thinly sliced
4 fresh flounder fillets
1/4 tsp. salt
1/8 tsp. pepper
1 (7 1/4 oz.) can salmon, drained, flaked
1/2 c. real mayonnaise
1/2 c. sour cream
1/4 c. chili sauce

Line bottom of 8x8x2 inch dish with onion. Sprinkle fillets with salt and pepper. Place 1/4 of the salmon on each fillet. Roll up lengthwise, place in dish. Bake covered in 350 degree oven 25 minutes; remove.

Stir together remaining ingredients, spoon over fillets. Bake uncovered 5 to 10 minutes or until fish flakes easily. Garnish with watercress, lemon slices and cooked shrimp, if desired. Yields: 4.
