QUICK FISH CHOWDER | |
1 can tomatoes 2 pkg. frozen mixed vegetables 2 tsp. salt 1/2 tsp. pepper 1 bay leaf 2 tbsp. butter 2 c. water 1/2 c. dry instant mashed potatoes 2 pkg. frozen cod fillets, partly thawed Preheat oven to 400 degrees. Put first 7 ingredients in saucepan and bring to boil. Remove from heat; add instant potatoes; stir until smooth and slightly thickened. Put fish fillets in greased 3-4 quart casserole and pour mixture over top. Cover and bake 25-30 minutes, or until fish is white and firm and flakes easily. |
