MARZIPAN COOKIES 
1 c. butter, softened
1/2 c. sugar
2 1/2 c. all-purpose flour
1 tsp. almond extract

Cream butter and sugar. Stir in flour and almond extract until mixture looks like cornmeal. Roll out and cut into different shapes (may be colored if desired). Place on ungreased cookie sheets. Chill 1/2 hour. Bake at 300 degrees for 30 minutes until set, but not brown.
