NOODLE PUDDING 
1/2 lb. noodles
2 eggs
2 oz. chopped walnuts
1/2 lb. cottage cheese (low fat)
2 boxes small raisins (plumped with apple juice)
1/4 lb. butter, or canola oil
3/4 c. sugar
1/4 pt. sour cream (or sour cream substitute)
2 1/2 handfuls of cornflakes

Cook and drain noodles. Put plumped raisins and butter (oil) into noodles. Add sugar, cottage cheese, eggs and sour cream. Mix. Pour into greased baking dish. Add nuts and cornflakes to top. Bake at 350 degrees for 45 minutes.
