MEATBALL AND ZUCCHINI SUPPER | |
1 lb. ground chuck 1 egg, slightly beaten 1/2 c. soft bread crumbs 1/4 tsp. salt 1 tbsp. chopped parsley 2 tbsp. butter 1/2 c. chopped onion 1 clove garlic, crushed 1/2 tsp. cumin 1/2 tsp. salt 8 oz. can tomato sauce 3 zucchini (about 1 1/2 lbs.), washed, sliced 1/4 inch thick 1. Make meatballs - first five ingredients. In medium bowl, combine ground chuck, egg, 3 tablespoons water, bread crumbs, salt and parsley; mix lightly. With hands, shape into balls. 2. In hot butter, saute meatballs, along with onion, garlic and cumin a single layer at a time, until browned on all sides. Drain off fat. 3. Add salt, tomato sauce and zucchini. Bring to boil; simmer, covered, 8 to 10 minutes, until zucchini is tender. Serves 6. |
