PUFF POTATOES 
4 c. mashed potatoes
1/3 c. finely chopped onion
1 egg, beaten
1 tsp. salt
Dash of pepper
1 (8 oz.) pkg. cream cheese

Cook potatoes and onions together, mash, mix with other ingredients and pour into greased casserole dish. (For puffier potatoes, separate egg, beat egg white until stiff, then fold in with other ingredients.

Bake at 350 degrees for 15 minutes. (Shredded cheese may be added before baking.)
