STEAK DIANE 
1 flank steak
1 tsp. dry mustard
1/4 c. butter
3 tbsp. lemon juice
2 tsp. snipped chives
1 tbsp. Worcestershire sauce

With meat mallet pound steak to 1/3" thickness. Sprinkle each side with salt, freshly ground pepper and 1/8 teaspoon of the dry mustard; pound into meat.

In electric fry pan or fry pan melt butter over direct heat. Add steak; cook 2 minutes on each side. Transfer to hot serving plate. To pan add remaining ingredients; bring to boiling. Return meat to pan; spoon sauce over. Trim with cooked fluted mushrooms if desired. Makes 4 servings.
