KRAUT SALAD 
1 (27 oz.) can sauerkraut, drained
1 1/2 c. celery, finely chopped
3/4 c. sweet onion, finely
1 carrot, grated
1/2 green pepper, chopped
1/2 red pepper, chopped
1 c. sugar
1/2 c. salad oil
1/2 c. white vinegar
1 tsp. celery seed

Cut up kraut. Combine with celery, onion, carrot, and peppers. Dissolve sugar in oil and vinegar. Add celery seed. Pour over vegetables and toss. Cover and chill for several hours. Drain before serving and place on a bed of lettuce.
