LOW SODIUM CHICKEN AND RICE 
4 skinned chicken breasts
2 c. uncooked minute rice
1/2 stick unsalted butter
2 c. unsalted tomatoes with juice
1/2 c. chicken broth
1 c. chopped celery
1 med. onion, sliced thin
Pepper to taste
1 tsp. sage
1 tsp. parsley

Place chicken breast in casserole dish with butter. Cover and cook in microwave 15 minutes on high. Remove chicken leaving remainder of butter and broth. Place rest of ingredients in dish and cook on high for 20 minutes covered. Place chicken on top of rice mixture and cook 10 minutes longer. Serve with green beans and salad.

Since microwave ovens vary in power, you may need to adjust your cooking time.
