CARIBBEAN FUDGE PIE | |
1/4 c. butter 3/4 c. brown sugar 3 eggs 1 (12 oz.) pkg. semi-sweet melted chocolate pieces 2 tsp. instant coffee powder 1 tsp. vanilla extract or rum extract 1/4 c. flour 1 c. pecans, broken Preheat oven to 375 degrees. In a large bowl, cream butter and sugar. Beat in eggs, one at a time. Add melted chocolate, instant coffee, and extract. Stir in flour and broken nuts. Turn into 9 inch unbaked pie shell and bake for 25 minutes. Cool. May top pie with more nut halves and whipped cream if desired. This is a very rich pie, so smaller slices should be served. |
