HONEY CHICKEN 
2 lbs. chicken, cut into pieces and skinned (I often use boned breasts)
1/3 c. flour
6 tbsp. butter
1/4 c. honey
3 tbsp. lemon juice
2 tbsp. soy sauce
2 cloves garlic, finely minced
1 tbsp. finely minced fresh ginger root

Melt 3 tablespoons of the butter in a baking dish large enough to accommodate all the chicken pieces in a single layer. Coat the chicken pieces with the flour. Arrange in the baking dish in a single layer. Bake uncovered for 30 minutes.

Melt the remaining 3 tablespoons of butter in a saucepan with all the remaining ingredients. After the initial 30 minutes of baking time, turn over the chicken pieces. Pour on the honey mixture and brush with basting brush to coat each piece. Bake for 30 minutes more, until chicken is tender and brown.
