SPICY PEACH JELLO SALAD 
2 (16 oz.) cans sliced peaches (juice packed, drained; save juice)
1 (6 oz.) pkg. peach Jello
1/2 tsp. each cinnamon, ground cloves, nutmeg and ginger
2 c. boiling water
2 c. peach juice (add enough water to make 2 c.)
2 tbsp. cider vinegar
Mayonnaise

In saucepan dissolve gelatin and spices in boiling water. Pour into flat 2 quart pyrex dish. Add peach juice and vinegar. Mix. Add peaches, chill until set. To serve, cut into squares, place on lettuce and top with mayonnaise. Serves 8-10.
