LEMON-BAKED CHICKEN 
1 frying chicken (cut into serving pieces)
2 tbsp. oil or melted butter
3 tbsp. fresh lemon juice
1 clove-garlic (crushed)
1/2 tsp. salt
dash pepper

Preheat oven to 350°F. In a medium bowl, combine lemon juice, oil or butter, garlic, salt, and pepper. Arrange chicken in a shallow casserole or baking dish. Pour lemon and oil mixture over chicken. Cover and bake until tender (approximately 40 minutes), basting occasionally. Uncover casserole dish and bake 10 minutes longer to allow chicken to brown. To serve, sprinkle with chopped parsley (optional).
