CHICKEN PICK - UPS 
2 tbsp. finely chopped onion
2 tbsp. finely chopped green pepper
3 tbsp. butter
2 (8 oz.) cans seasoned tomato sauce
3/4 c. water
2 tsp. vinegar
2 tbsp. brown sugar
1/2 tsp. salt
1/4 tsp. pepper
1 tbsp. Worcestershire sauce
1/2 tsp. sweet basil (optional)
1/2 tsp. oregano (optional)
1 tbsp. sherry (optional)
2 c. cooked, diced chicken
1/4 c. melted butter
3/4 tsp. garlic salt
8 long rolls

Saute onions and green pepper in 3 tablespoons butter until tender and lightly browned. Stir in tomato sauce, water, sugar, vinegar and seasonings. Simmer uncovered 15 minutes. Add chicken and simmer 20 minutes longer. Blend melted butter and garlic salt. Split rolls lengthwise, but not through. Brush with garlic butter. Wrap in foil and heat in 350 degree oven for 8 minutes. Remove and fill with chicken mixture. Yield 8 portions.
