BROCCOLI AND RICE CASSEROLE 
3 tbsp. butter
1 medium onion, chopped
1 stalk celery, sliced thin
1 can cream of mushroom soup
1 c. shredded Cheddar cheese
3/4 c. uncooked Minute rice
1 pkg. frozen chopped broccoli, thawed and drained

Melt butter in frying pan. Add onion and celery. Sauté until clear. Remove from heat. Mix with soup, cheese and broccoli. Last, add rice. Put in baking dish that has been sprayed with nonstick cooking spray.

Bake at 350°F for 30 minutes.
