BUTTER LEMON COOKIES 
1 c. butter, softened
1 c. sugar
2 egg yolks, beaten
2 1/2 c. flour
1/4 tsp. salt
1 1/2 tsp. baking soda
1 1/2 tsp. lemon extract

Mix all the ingredients in order given. Form into balls about the size of a walnut. Dip one side in sugar, place on cookie sheet. Press with fork making ridges. Bake 9 minutes at 350 degrees, on ungreased cookie sheet. Cool. Makes 3 dozen.

These were delicious! Thank you for this simple, straight-forward recipe. I had a bottle of lemon extract that I was trying to use up (since we rarely buy it), and I thought lemon-flavored cookies might be a good idea. However, many recipes involve cake mix (not all of us keep cake mix on hand), or extra ingredients that seem unnecessary. I am glad that I found this one.

A couple of notes:

- I cut the ingredient amounts in half, since this batch is just for me and my husband.
- I couldn't form the dough into balls. It was slightly wet. Not sure if this is something I did wrong. I used a spoon to place clumps onto the baking sheet, for "drop-style" cookies. I lightly sprinkled them with sugar rather than dipping them in it (since I couldn't pick up the clumps).
