WILTED LETTUCE SALAD 
4 c. spring lettuce, torn in pieces
3 finely chopped spring onions
5 slices bacon, fried crisp (reserve drippings)
1 tsp. salt
2 tbsp. vinegar
1 tsp. sugar

Add chopped onions to lettuce pieces and toss. To the hot bacon drippings, add salt, vinegar, and sugar. Stir well, heat, and pour immediately over lettuce, tossing lightly to coat leaves. Crumble bacon and serve over top. Yield: 4 servings.
