BENEDICTINE FINGER SANDWICH 
1 (8 oz.) pkg. cream cheese, softened
1 med. cucumber
2 green onions
1 scant tbsp. mayonnaise
Pinch of salt
2 or 3 drops green food coloring

Seed cucumber. Put small pieces in blender with onion and mayonnaise. Puree or liquify 2 or 3 minutes. Strain and combine with soft cream cheese; blend well. Add food coloring and blend again. Spread mixture on thin sliced white or wheat bread. These may be made ahead of time and frozen until needed. Yield: 4 servings.

This recipe should be modified to state that you should drain the cucumber mixture through a cheesecloth - it should be a thick paste with very little water, else you will end up with a soup that is not spreadable. Letting it drip drain is not enough.
