CORN ZUCCHINI BAKE 
3-4 med. zucchini
1/4 c. chopped onion
1 tbsp. butter
2 beaten eggs
1 (10 oz.) pkg. frozen corn (or 1 lb. can)
1 c. shredded Swiss cheese
1/4 tsp. salt
1/4 c. stuffing mix

Slice zucchini 1" thick, cook 15 minutes, drain and mash. Saute onion in butter. Mix eggs, zucchini, onion, corn, salt, cheese, put in one quart casserole. Spread stuffing mix (mixed with melted butter) and more cheese on top. Bake in 350 degree oven for 40 minutes. Let stand 10 minutes.
