CREAM CHEESE MINTS 
2 1/2 c. powdered sugar
3 oz. cream cheese, softened
1/2 tsp. flavoring (mint or peppermint)
Food coloring

Mix powdered sugar and cheese with hands to consistency of pie dough. Add flavoring and food coloring - mints will darken with drying. If sticky, add more powdered sugar. Knead. Pinch off a piece the size of a small marble. Roll into ball, dip into granulated sugar and push into mold. Unmold on flat surface covered with waxed paper. Let dry on one side, turn, dry on other side. Makes approximately 90 mints.
