12 very small new potatoes (about 1 1/2 lbs.) 1 tsp. salt 3 tbsp. butter 1/3 c. water 2 lbs. shelled fresh peas 2 tsp. sugar Wash and scrape the potatoes. Place them in a saucepan. Add the salt, butter, water and sugar. Cover and let stream over a moderate heat for 10 minutes. Shake the pan occasionally and tilt it back and forth. Do NOT remove lid. Steam is necessary to do this right. Add the peas, recover the pan, and let steam until the potatoes and peas are tender or about 30 minutes. Makes 4 servings. |
