CHICKEN WITH PARSLEY SAUCE 
1 (2 1/2 lb.) chicken, cut into serving pieces
Salt and pepper, to taste
4 tbsp. butter
1/4 c. bread crumbs
2 tbsp. chopped parsley
2 tbsp. chopped shallots
1 sm. clove garlic, minced

Preheat broiler. Sprinkle chicken with salt and pepper. Heat butter in heat- proof baking dish large enough to hold the chicken pieces in 1 layer. Turn the pieces in butter. Arrange the pieces skin side down and place under broiler about 6 inches from heat.

Broil until golden brown and crispy, remove from oven and turn over. Broil other side until brown. Blend the bread crumbs, shallots, garlic, and parsley. Blend well. Sprinkle this over the chicken and baste to coat well with the butter. Set oven at 400 degrees and bake chicken 10 minutes or until done. Run chicken briefly under the broiler to brown just before serving. 4 servings.
