HOT SAUSAGE BALLS 
1 lb. Italian sausage (HOT), browned, drained, cooled
4 c. (1 lb.) sharp Cheddar cheese, shredded
3 c. buttermilk biscuit mix
3/4 c. water

Mix all ingredients together with a fork until just blended. Form into 1 inch balls and place on cookie sheets 2 inches apart. Bake in 400 degree oven 12 to 15 minutes. Serve cool. Can be frozen and reheated. Makes 100.
