SPINACH - CHEESE SOUFFLE 
2 pkg. spinach, chopped, cooked & drained
2 tbsp. chopped onion
2/3 c. toasted fine bread crumbs
1/2 lb. bacon, fried & crumbled
1 tbsp. bacon grease
1 c. milk
2 eggs, beaten
14 oz. shredded Cheddar cheese

Beat eggs and add milk, onion, bread crumbs, half of the cheese and crumbled bacon. Then, add spinach and fold into above mixture until it is well mixed. Spread the bacon grease in the bottom of pyrex dish and then evenly spread the spinach mixture in the dish and top with the remaining cheese.

Temperature 350 degrees. Time 35-45 minutes. Size of dish 1 1/2 quart casserole. Serves 8. This is a recipe my Mom used to encourage our family to eat spinach. It worked! We all loved it!
