SPINACH QUICHE | |
1 (10") unbaked pie shell 1 pkg. (9 oz.) frozen creamed spinach 1/8 tsp. ground black pepper 2 tsp. onions, chopped 1/16 tsp. nutmeg 4 eggs, lightly beaten 1 1/2 c. light cream OR Half and Half 1/2 c. Swiss cheese, grated 1/4 c. crisp cooked bacon, crumbled Prepare crust from your favorite recipe or package mix, but substitute a dry white wine for 1/2 the liquid. Place in 10 inch quiche or pie pan, flute edges and prick with fork all over. Bake at 350 degrees for 10 minutes until set, but not brown. Prepare spinach as package directs. Place into mixing bowl, cool slightly. Stir in onions, seasonings, eggs and cream. Pour into hot pastry shell and sprinkle with Swiss cheese and crumbled bacon. Bake at 350 degrees for 40 minutes or until a sharp knife inserted in center comes out clean. May be browned under broiler for few minutes, if desired. |
