QUICK POTATO SOUP 
3 c. potatoes, diced
1 sm. onion, minced
2 bouillon cubes
2 c. milk
Salt & pepper
1 1/2 c. boiling water

Add potatoes, onion and bouillon cubes to boiling water. Cover and cook until the potatoes are very tender, about 15 minutes. Do not drain. Partially mash with fork. Add milk and stir frequently while heating until bubbles form around edge. Salt and pepper to taste. Serves 4.
