BROCCOLI CORNBREAD 
This bread is very moist!

1 stick butter
1 med. onion, chopped
1 (10 oz.) pkg. frozen, chopped broccoli
6 oz. cottage cheese
4 eggs
1 pkg. Jiffy corn muffin mix

Place butter in heavy saucepan. Add onion. Cook for 7 to 8 minutes, then add frozen broccoli. Cook until broccoli thaws. Remove from heat. Add muffin mix, eggs and cottage cheese. Mix well. Pour batter into a greased and floured 9 x 9 inch pan. Bake at 375 degrees until brown.
