HAVE IT YOUR WAY CHICKEN 
4 skinless, boneless chicken breasts
2 eggs, beaten
1 c. bread crumbs, seasoned
3 tbsp. cooking sherry
Cooking oil
4 slices Mozzarella cheese
1 sm. jar marinara sauce

Dip chicken in egg then in bread crumbs; coat evenly on both sides. Heat oil in a large skillet. Cook chicken until golden brown on each side. Drain cooked chicken on paper towels. Place chicken in a glass baking dish and add cooking sherry. Cover with foil and bake at 325 degrees for 25 to 30 minutes. For an Italian twist add Parmesan cheese to bread crumbs, also half way through baking time. Top chicken with slices of Mozzarella cheese and cover with your favorite marinara sauce. Return to oven for remainder of baking time. Serves 4.
