FETTUCINI WITH CHICKEN SUNDRIED TOMATOES | |
2 cloves garlic, chopped 1/4 med. onion, chopped 3 boneless chicken breasts, cut into 3" strips 1 c. fresh basil, chopped 1 c. sundried tomatoes, pack in olive oil, chopped 1 lb. fettucini Olive oil from sundried tomatoes Serves 4. Saute onions and garlic in skillet until wilted. Add chicken strips and brown. Add basil and sundried tomatoes to skillet and saute another 2 minutes. Cook pasta according to package; drain. Toss hot fettucini and sauce together in serving bowl and add extra oil from sundried tomatoes. Add salt and pepper to taste. |
