SPANISH OMELET 
6 tbsp. butter
1/4 c. chopped onion
1/4 c. chopped green pepper
1 1/2 c. canned tomatoes
1 tsp. salt
2 tsp. sugar
1 c. sliced mushrooms
Dash of cayenne pepper

Saute onions and green peppers in butter until tender. Add other ingredients and simmer for 15 minutes. Serve between layers and over Basic Omelet.
