MORNING GLORY MUFFINS 
1/2 c. raisins
2 c. flour
1 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
2 c. grated carrots
1 lg. apple, grated
1/.2 c. sliced almonds
1/2 c. shredded coconut
3 eggs
2/3 c. vegetable oil
2 tsp. vanilla

Soak raisins in hot water to cover for 30 minutes.

Drain thoroughly. Mix flour, sugar, soda, cinnamon and salt in bowl. Stir in raisins, carrots, apples, almonds and coconut. Beat eggs with oil and vanilla to blend. Stir into flour mixture until combined. Put into muffin cups (greased, if not paper cups). Bake at 350 degrees until golden brown, 20-22 minutes. Cool 5 minutes before removing from pans. Makes 16 small or 1 dozen large muffins.
