BEEF STEW 
1 3/4 lbs. beet stew meat
1/3 c. flour
1/4 tsp. pepper
1/2 tsp. salt
3 tbsp. oil
1/4 c. onion, diced
1 clove garlic (opt.)
1/4 tsp. celery salt
2 3/4 c. hot water
1 c. canned or fresh tomatoes
6 carrots, peeled & cut up
3 or 4 potatoes, peeled & cut up
1/2 pkg. frozen peas

Cut beef into cubes, combine flour, pepper and salt and coat meat with flour mixture. Brown meat in Dutch oven or kettle until brown in oil. Combine with other ingredients and simmer until meat is tender. You can substitute a little fresh celery instead of celery salt.
