QUICK ITALIAN CHICKEN 
2 1/2 lbs. boneless chicken breasts
1 (26 oz.) jar marinara or spaghetti sauce
1/2 lb. sliced mushrooms
8 oz. shredded Mozzarella cheese
Sliced zucchini, optional
Red or green pepper, optional

Cut chicken into 1-2 inch slices. Place in a 9x13 inch baking pan. Add sauce, mushrooms and additional vegetables if desired; mix well. Cook for 30 minutes at 350 degrees. Sprinkle on Mozzarella cheese and cook for an additional 15 minutes. Serve with your favorite pasta.
