QUICK CHICKEN LINGUINE 
1 (16 oz.) pkg. linguine pasta
1 lb. boneless, skinless chicken breasts
1 lg. onion, sliced
1 clove garlic, minced
About 2 c. sliced zucchini
About 1 1/4 c. sliced mushrooms
1 (15 1/2 oz.) jar spaghetti sauce
About 3 tbsp. vegetable oil, divided

Cut chicken into thin strips and cook it (you may saute or poach, whichever you prefer). Saute onion and garlic in about 1 tablespoon vegetable oil. Add zucchini and mushrooms. Cook until crisp-tender, about 3 minutes.

Add spaghetti sauce and chicken; cook until sauce is heated through, about 5 minutes. Serve over cooked linguine, sprinkled with Parmesan cheese. Makes 4-6 servings.
