PIEROGI 
3 c. flour
2 tbsp. melted butter
1/2 tsp. salt
1 egg
1 c. sour cream

Mix dry ingredients, add melted butter cut in until mixture is crumbly. Mix egg with sour cream and add to dry ingredient mixture. mix well, turn out on lightly floured board and knead well. Roll out thin. Cut with pierogi cuttor or use clean empty can from vegetables (3 5/8 to 3 1/2 inch across). Place filling on center of circle, moiston edges of dough with water and fold dough in half and seal edges (fork can be used). Place in boiling water, cover and boil 5 to 7 minutes. Drain then fry until golden brown.

Sauerkraut filling:

1/2 qt. sauerkraut
1 small onion (cut fine)
1 small can mushrooms (cut fine)

Saute onions and mushrooms in tablespoon of butter. Add sauerkraut which has been drained until almost dry and cut into small pieces. Keep mixing until all moisture is absorbed.

Cheese filling:

1 lb. Farmers cheese
1 egg
Sugar to taste
Salt and pepper to taste

Mix all ingredients together.
