SCOTTISH SHORTBREAD 
1 1/2 c. sifted flour
3/4 c. confectioners' sugar
1/4 tsp. salt
1/2 lb. butter (softened to room temperature)

Preheat oven to 325 degrees. Mix all ingredients together. Knead thoroughly until the consistency becomes doughy. Use Pam spray on 8 x 8 size pan. Press dough into pan. Bake approximately 1 hour. Should be pale not brown.
