MOZZARELLA CHEESE QUICHE 
1 (10 oz.) pkg. frozen chopped spinach
1/3 c. cooked mushrooms
4 eggs
1 c. cream or half & half
2 c. shredded Mozzarella cheese
1 unbaked pie shell

Preheat oven to 350 degrees. Cook spinach according to package directions; drain. Mix eggs, cream, and half the cheese together. Stir in spinach and mushrooms. Pour into unbaked pie shell. Sprinkle remaining cheese on top. Bake for 45 minutes or until crust is brown and cheese is puffed. Serve promptly.
