FUNNEL CAKES 
2 1/2 c. self-rising flour
1/4 c. sugar
1 1/3 c. milk
2 eggs, slightly beaten
Confectioners' sugar

Combine flour, sugar, milk and eggs in a bowl. Cover bottom of funnel with a finger and pour in batter. Remove finger and swirl some batter in hot oil. Fry for a minute or so on each side. Sprinkle with confectioners' sugar. Repeat with remaining batter.
