LEMON CHEESE CAKE - LUSCIOUS AND
LITE
 
1 1/2 c. 100% Bran cereal
Brown sugar substitute equal to 2 tbsp.
1/3 c. melted butter
1/2 tsp. cinnamon

Mix and pat into a 9 inch pie plate. Cook in microwave - 3 minutes on HIGH. Cool.

FILLING:

Boil together:

1/2 c. water
1/3 c. lemon juice

Add:

2 sm. pkg. sugar-free lemon Jello

Dissolve Jello in water-juice mixture and put into blender. Gradually add:

1 (16 oz.) carton low-fat cottage cheese

Blend until smooth. Pour into cooled crust. Refrigerate until set - about 3 hours.

Since microwave ovens vary in power, you may need to adjust your cooking time.
