NOODLES AND TOMATOES (SERVES 4) 
3/4 lb. green noodles
4 tbsp. butter
1/2 c. finely chopped onions
2 c. chopped partly drained, canned tomatoes
Salt and pepper to taste
1 tbsp. chopped fresh basil or 1 tsp. dried
1/2 c. heavy cream
1/4 c. freshly grated Parmesan cheese

Preheat the broiler to high. Bring water to boil. Heat 2 tablespoons of the butter in a saucepan and add the onions. Cook, stirring until wilted. Add the tomatoes, salt, pepper and basil and cook stirring about 5 minutes.

Add the cream and continue cooking about 1 minute. Add noodles and salt to boiling water, cook 2 to 10 minutes, depending on whether the noodles are fresh or dried and their size.

When the noodles are cooked, drain them and return to pan they were cooked in. Add the remaining 2 tablespoons butter and stir to coat. Add the tomato sauce and stir to coat evenly.

Pour into baking dish and sprinkle with cheese and broil until cheese is nicely glazed about 5 minutes.
