OATMEAL CAKE 
1 c. quick oatmeal
1 1/2 c. boiling water
2 eggs
1/2 c. butter
1 tsp. cinnamon
1 tsp. baking soda
1 c. brown sugar
1 c. sugar
1 tsp. salt
1 tsp. vanilla
1 1/2 c. flour

Pour hot water over oatmeal, let stand for 20 minutes. Cream sugar and butter, add eggs and vanilla. Add dry ingredients and oatmeal. Bake in 9 x 13 pan at 325 degrees for 35-40 minutes.

ICING:

4 tbsp. butter
2 tbsp. milk
1 c. coconut
1/2 c. brown sugar

Combine butter, milk and sugar. Bring to a boil, remove from heat and add coconut. Pour over warm cake, put under broiler or in oven until brown (2-3 minutes).
