SHRIMP SCAMPI 
2 lbs. cleaned and deviened lg. shrimp, cut in half
3-4 scallions, sliced
3 lg. cloves garlic, crushed
3 sticks butter
3/4 c. dry sherry
1 1/2 c. bread crumbs
3 tbsp. Parmesan cheese
1 tbsp. parsley
Black pepper to taste

Saute garlic in 1/2 stick butter, 2-3 minutes. Add scallions; saute lightly 2 more minutes. Add shrimp and cook until nearly done. Mix in 1/4 cup crumbs, 1 stick melted butter and sherry. Place in shallow casserole; sprinkle with black pepper and parsley.

Toss 1/2 stick with 1 1/2 cups crumbs. Spread over shrimp. Shake black pepper and Parmesan cheese. Bake at 375 degrees for 45 minutes to 1 hour until bubbly and lightly browned.
