CRANBERRY PUMPKIN BREAD | |
2 eggs, beaten 2 c. sugar 1 1/2 c. oil 1 c. Libby pumpkin 2 1/4 c. flour 1 tbsp. pumpkin pie spice or cinnamon 1 tsp. baking soda 1/2 tsp. salt 1 c. chopped cranberries Mix eggs and sugar. Add oil and pumpkin and mix well. In large bowl, combine flour, spices, baking soda and salt. Make a well in the center and add pumpkin mix. Combine well. Grease 2 (13 oz.) coffee cans and flour them. Pour batter into pans and bake at 350 degrees for 1 hour. |
