MY MOM'S BISCOTTI | |
3 eggs 1 c. sugar 1/2 c. butter, melted & cooled 2 c. flour 2 tsp. baking powder 1/2 tsp. salt 1 c. almonds, ground fine 1 tbsp. anise extract 2 tsp. vanilla extract 1/2 c. maraschino cherries, optsp. Beat eggs and sugar. Add cooled butter, anise and vanilla extracts. In separate bowl, mix together flour, baking powder, salt, almonds and cherries. Add to creamed mixture. Shape into 2 logs and place on cookie sheet. Bake 25 mins. at 375°F. Remove from oven and slice into one inch slices and toast on both sides. Yields about 4 dozen. |
