EASY VEGETABLE BARLEY SOUP | |
2 c. coarse chopped cabbage 1 c. each coarsely chopped onion Sliced celery, carrots, zucchini, green beans, canned whole tomatoes, sliced mushrooms 2 tbsp. butter 4 1/2 c. water 2 c. cooked barley 6 packets instant broth & seasoning mix 2 sm. bay leaves Dash each of thyme, salt & freshly ground pepper In a large saucepan heat butter until melted; add vegetables and cook over medium heat, stirring occasionally until cabbage begins to wilt. Add remaining ingredients and bring to a boil. Reduce heat, cover and let simmer 30 to 45 minutes, stirring occasionally. Remove and discard bay leaves before serving. |
