SOFT OATMEAL COOKIES 
2 c. raisins
2/3 c. water
1 stick butter
1 c. sugar
2 eggs
1 c. whole wheat flour
1 c. white flour
1 tsp. baking soda
1/2 tsp. baking powder
1/3 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla
1 c. oatmeal
1/2 c. nuts

In saucepan, heat raisins and water to boiling. Reduce heat and simmer 2 minutes. Save 1/3 cup liquid with raisins; set aside. Cream butter, sugar, and eggs until smooth and well mixed. Add flours, soda, salt, baking powder, cinnamon, nutmeg, vanilla, oats, nuts, and the raisins and the 1/3 of liquid. Stir until blended. Bake at 375 degrees for 10 to 12 minutes.
